A16 Restuarant in San Francisco Earns Rave Reviews

Nate Appleman is co-owner and executive chef of two of San Francisco's most popular resturants; A16 and SPQR. Appleman's career started at the Culinary Institute of America and later led him on a six month journey through Italy studying the art of butchery. He was so awestruck by the traditional process for curing and drying meat that he spent much of his time in Italy learning to cure his own prosciutto and salami. Appleman now uses his knowledge gained in Florence to create some of the most authentic, rustic Italian dishes in San Francisco.

Nate Appleman has become one of America's few certified pizzaiolos, Italian for pizza chef.  He returns regularly to Italy to study the art of Italian cooking and to build relationships with local farmers. His passion for Italian cooking runs so deep that he imports some of his ingredients from the local farmers he has met on his journeys.

Appleman was recently awarded the James Beard Foundation's Chef of the Year Award for his culinary excellence and dedication. The James Beard Foundation recognizes culinary experts who strive to celebrate, preserve and nuture America's culinary heritage.
